Maybe you overrate this functionality a little bit. The german forum filemaker-magazin.de doesn't use notifications at all and I appreciate that a lot. That doesn't mean that there is less involvement than here. Au contraire!
But hey, why not starting a poll for this?
In the end I don't care, but if it helps it could be a way to decrease the costs.
Notifications are a critical feature!
For FileMaker-Magazin forum I often miss to see replys for new questions as I don't get an email.
Discourse offers notification on mobile (through app) and on desktop (with discourse page open in browser).
There are a lot of people that subscribe to email notifications as the only way they read the forum. And if it allows it, how they respond to posts.
It is the major reason I came to The FM Soup from the FileMaker Community site.
I filter all my FileMaker related lists into a single folder in my email client (and have done for years), and what the Community does now is worthless. Being able to see the actual subject line in the emails, and sorted together is priceless. Take that away and I’m gone.
Make it optional if you wish, but don’t remove it.

@Cecile How many emails per month are we sending now?
It looks like something like moosend.com offers unlimited email with any of their paid accounts. So $10/month. Is using a service like that an option to send notifications from Discourse?
We'll have to investigate. The cost of email traffic was a hurdle. Our current and near future needs are all met on the free plans at moosend.com
The free account doesn’t include the SMTP server.

I found that my hosting company could easily host a discourse site.
And, as long as the emails sent didn't exceed 250 emails per hour, it would work fine.
What are the storage requirements?
